What is koji? How to use Miso and Shio Koji ? How to make Amazake?

Aedan koji kitchen provides fresh koji and traditional koji products, Miso, Amazake, Shio koji, and Pickling sauce. We prepare koji bento boxes every day using our probiotic pantry. In this class, we'll share tips for easily creating healthy and delicious dishes using fresh vegetables and tofu while harnessing the power of koji!

In the first half, you'll learn about koji and various koji-based products. In the second half, we'll move to the kitchen for a hands-on cooking demonstration. Participants will make and take home a quart-sized jar of shio koji, which will then be fermented at home for two weeks. At the end of class, we will eat Aedan koii bento and soup together. April will be Aedan’s Anniversary month and we will also introduce our very popular tuna poke recipe!

This class will provide many ideas for easy, healthy meals to make at home. We believe that probiotic koji dishes have healing, detoxifying, and immune-boosting effects!
