WHAT IS KOJI?

What is koji? How do you use Miso and Shio Koji ? How do you make Amazake?

Aedan koji kitchen provides fresh koji and traditional koji products, such as Miso, Amazake, Shio koji, and Pickling sauce. We prepare koji bento boxes every day using our probiotic pantry.

In this class, we'll share tips and tricks on how to easily create healthy and delicious dishes using fresh ingredients while harnessing the power of koji!

In the first half of class, you'll learn about koji and various koji-based products. In the second half, we'll move to the kitchen for a hands-on cooking demonstration. Participants will make and take home a quart-sized jar of shio koji, which will then be fermented at home for two weeks. At the end of class, we will eat Aedan koii bento boxes and soup together. We will also be introducing a variety of sauces made from koji products and demonstrate how to use them to create easy and delicious recipes.

We believe that probiotic koji dishes have healing, detoxifying, and immune-boosting effects. We hope to provide many ideas for easy, healthy meals to make at home!
